Describe the kitchen model
A dine-in restaurant, takeaway outlet, central kitchen and delivery-only brand have different operating arrangements. Record the entity, preparation location, storage and delivery responsibilities. A platform listing is not a substitute for reviewing the food-business licensing route.
Review the premises before opening
FoSCoS guidance links the application to the premises and kinds of business carried on there. Check the actual address, activities and current eligibility instructions. Local land-use, fire, trade and other premises questions require a separate location-specific assessment.
Keep the food evidence usable
- Supplier and ingredient receipts linked to kitchen records.
- Cleaning, handling and relevant training records.
- Complaint and corrective-action records.
- Current licence details and conditions for the premises.
Reconcile every sales channel
Separate dine-in, takeaway and platform orders, then reconcile discounts, cancellations, commissions and settlements. Review the tax treatment of each arrangement rather than applying one assumption to every receipt. Payroll and stock consumption need their own supporting records.
An expansion example
A second brand operating from the same kitchen should be checked against the actual entity and licensed activities. A second physical kitchen requires its own premises review; a shared brand name does not establish permission coverage.
Agree the support boundary
Kosha can organise the permission worklist, books and documentation. Technical food-safety work, testing and authority inspections require the relevant specialists. Bring the premises details, menu, sales channels and existing approvals to the first discussion.
Prepare one opening file for each kitchen
List the operating entity, premises address, menu, preparation activities and planned sales channels. Attach existing permissions, lease records and the current layout, identifying which documents describe the proposed operation and which relate to an earlier occupant or activity.
FSSAI licensing support uses the food-business facts, while business licence assessment organises the wider premises questions. Assign a kitchen contact to confirm operational details and keep responses from landlords, technical advisers and authorities in the same worklist.
Explain the daily sales-to-bank difference
A delivery platform may deduct commissions, refunds and adjustments from several days of orders in one settlement. Keep the order identifiers and settlement period alongside the bank receipt. Separate restaurant-funded discounts from other adjustments according to the supporting records instead of posting the net receipt as the entire sales figure.
Bookkeeping and monthly close can bring those records together with counter sales and cash collections. For a cancelled order disputed after settlement, track the platform response and later adjustment against the original order so the issue does not disappear into the next month’s total.
